The pistachio chicken at Wild Thyme Bistro is absolutely worth the stop, especially if you’re anywhere near Zion National Park. Tender chicken, a rich but not heavy pistachio cream sauce, just the right little kick, and mashed potatoes that somehow make the whole plate feel like comfort food with a passport. We came in expecting a good meal after Zion. This dish turned into the thing I’ll remember from the day. It’s warm, flavorful, a little unexpected, and honestly close to perfect. If you’re minutes from the park and wondering where to eat: get the pistachio chicken. Don’t overthink it.
