Never would I imagine to have the best meal in the US from a small family-owned restaurant in Virgin, Utah They clearly put a lot of effort into the design of the space, with owners paintings on the wall, and planted roses outside of window and beautiful Zion in the background Dishes are very very well sauced, esp for the grilled salmon. A mix of sweet and sour with some mash we later find out to be mix of potato and cauliflower, with balsamic, red wine and sugar. They said they source salmon from Hawaii three time a wk to make sure freshness, which is very impressive considering it's in a town only with ~600 population + tourists in peak seasons. 100/100 experience
